Luscious Picnic Recipes by Chef Renato of Mediterranean Cuisine


Thank God is Saturday and we will have lots of time to take care ourselves during the weekend. But, before let's spend some time cooking in our kitchen and this can happen during the Saturday because on Sunday I refuse to do whatever except that having fun.

How about walking at the national park of our area this Sunday? I’m thinking to call my friends and having a picnic along them, but you can enjoy the outdoor time along with your children, husband or even with your lover.

However, get ready to prepare the on the go Picnic meal today and have fun tomorrow at the park.

Chef Renato is sharing with us Picnic recipes based on the New Mediterranean cuisine where he has been awarded for many years.

Burger for on the go Picnic

14 ounce of ground Beef Veal

1 tomato / 1 onion / Salt and pepper

1 bunch of Valerian salad / 8 slices of Gouda cheese / 1 avocado / 2 tomatoes

1 tbsp of mustard / 1 tbsp of ketchup / 1 bunch of parsley

1.7 ounce of Olive Oil

Chop into fine pieces the tomato, the onion and the parsley. Gather them carefully and unite them in a large bowl with the Beef Veal, the salt and pepper.

Now it’s time to work gently all ingredients together to make thin patties until they acquire a dense.

Leave the burgers alone for 15 minutes then start shaping balls according to your desired size. After gently pressing and stretching the patties make your way to the grill.

Once the burgers are ready, it's time to cover them with bread.

Cut the burger's bread right in the middle and start dressing their both slices with ketchup and mayonnaise. Then top them with a slice of avocado, tomato, cheese and with Valerian salad.

Your meal will be ready right after you slide the lot between the buns.

Fruit salad for on the go Picnic

1 Kiwi, 1 Orange, 1 Apple, 1 Peach, half a Melon, 10 strawberries, 3.4 ounces of Cherry juice, 10 leaves of mint, a little lemon.

Wash well all the fruit, and then chop them in your preferable form.

Stir all the ingredients together, and then let them stand for few minutes until their flavour gets mixed with each other.

This salad can be made with seasonal fruit or with your favorite fruit. If your salad does not contain liquid fruit like the orange, use lemon juice to protect them from not getting oxidize (Changing in brown color)
